Gentile gives you all the quality markers – hand-sorted olives, 12-hour pressing, 0.20% acidity – but with a mellower, more versatile flavor profile. Four generations still hand-sort every olive, ensuring only the fully ripe ones make it into this pressing. The result? An oil that tastes premium without intimidating your palate.

I have used both the Nobile and Gentile evoo. As the name suggests, this is gentler on the palate and works really well in the salads. Wish it comes in 5-L tin too! :D
